Ingredients

For the Lamb

  • 4 American lamb shoulder chops
  • 2 tablespoons extra virgin olive oil
  • 1½ teaspoons kosher salt
  • ¾ teaspoon freshly cracked black pepper

For the Mint Salsa Verde

  • 1 cup fresh mint leaves, tightly packed
  • ½ cup fresh flat leaf parsley, tightly packed
  • 2 anchovy fillets
  • 1 garlic clove
  • 2 tablespoons capers, drained
  • Zest and juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • ½ tablespoon red wine vinegar
  • ½ cup extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes

For Serving

  • Fresh mint leaves
  • Flaky sea salt

Directions

  • Season the Lamb: Rub the American lamb shoulder chops with the olive oil and season generously with the kosher salt and freshly cracked black pepper. Let the chops rest at room temperature for 30 minutes before grilling.
  • Prepare the Herbs: Finely chop the mint and parsley by hand, or pulse briefly in a food processor, keeping the texture slightly coarse. Transfer to a bowl. Finely mince and mash the anchovy fillets, garlic, and capers into a paste, then stir them into the herbs.
  • Make the Mint Salsa Verde: Add the lemon zest, lemon juice, Dijon mustard, red wine vinegar, olive oil, kosher salt, and red pepper flakes to the herb mixture. Stir until well combined. Taste and adjust the seasoning, acidity, or heat as desired. Let the salsa verde sit at room temperature while the lamb cooks so the flavors can meld.
  • Grill the Lamb Chops: Preheat a grill or cast iron grill pan over high heat. Grill the lamb chops for 3 to 4 minutes per side, without moving them, until nicely charred and the internal temperature reaches 145°F for medium doneness. Transfer to a plate and let rest for 5 minutes.
  • Plate and Serve: Arrange the lamb chops on a serving platter or individual plates. Spoon the mint salsa verde generously over the lamb and finish with flaky sea salt and fresh mint leaves before serving.
