Ingredients
For the Lamb Kofta:
-
1 lb ground American Lamb
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
2 tablespoons chopped fresh parsley
-
1 tablespoon chopped fresh mint
-
1 teaspoon ground cumin
-
1 teaspoon ground coriander
-
1/2 teaspoon smoked paprika
-
1 teaspoon kosher salt
-
½ teaspoon freshly ground black pepper
-
Wooden skewers, soaked in water for 30 minutes
For the Grilled Zucchini and Pistachio Salad with Oregano:
-
2 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
-
2 tablespoons extra virgin olive oil
-
Salt and pepper to taste
-
Zest and juice of 1 medium lemon
-
1/2 cup shelled pistachios
-
1/2 cup crumbled feta cheese
-
2 tablespoons fresh oregano leaves
Directions
1. Prepare the Lamb Kofta:
In a large mixing bowl, combine the ground American Lamb, chopped onion, minced garlic, chopped parsley, chopped mint, ground cumin, ground coriander, smoked paprika, salt, and pepper.
Mix well until all the ingredients are evenly combined.
Divide the mixture into equal portions and shape each portion into elongated sausage shapes around the soaked wooden skewers.
Place the lamb kofta skewers on a plate and refrigerate for at least 30 minutes to allow the flavors to meld.2. Grill the Lamb Kofta and Zucchini:
Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
Place the lamb kofta skewers on the grill and cook for about 4-5 minutes per side, or until cooked through and nicely charred on the outside.
While the kofta are grilling, brush the sliced zucchini with olive oil and season with salt and pepper.
Grill the zucchini slices for 2-3 minutes per side, or until tender and lightly charred.
Once cooked, remove the lamb kofta skewers and grilled zucchini from the grill.
3. Assemble the platter.
On a large platter, spread grilled zucchini strips, lemon zest and juice, pistachios, feta and oregano leaves.
Remove skewers from kofta and place on top of the salad.
Sprinkle more crumbled feta cheese over the salad for extra flavor.
Serve immediately with lemon wedges on the side.

All Other Cuts
Internal temperature of 145°F, with a 3 minute rest
