Ingredients
- 1 flour tortilla burrito size.
- 1/2 pound ground American Lamb.
- 1 teaspoon garlic powder.
- ½ teaspoon salt.
- ½ teaspoon ground black pepper,
- 7 large eggs.
- 1 cup bell pepper, sliced.
- 1 small onion, chopped.
- 2 cups of baby spinach.
- 4 ounces crumbled feta.
Directions
1) Heat a pan on the stovetop to medium high heat. Add the ground American lamb, season
with salt, pepper and garlic powder. Cook until browned 5-6 minutes. Remove
excess fat from the pan and move to a bowl.
2) In the same pan heat one teaspoon avocado oil. Add the bell peppers and
onion. Sauté until the veggies become tender.
3) In a round pie dish or cake pan, lightly spray with oil. Place the tortilla into the
dish and press into place to evenly line the dish or pan. Crack 4 eggs into the
tortilla lined dish and lightly beat the eggs. Add the cooked ground lamb, bell
peppers, onions and spinach. Spread out the veggies evenly into the egg
mixture. Crack the remaining eggs on top and top with crumbled feta cheese.
4) Place in a 400 F preheated oven and bake for 18 minutes and cook until the yolk
and egg whites are firm. Serve with a side salad or on its own.
