- 9 American Lamb loin chops
- 1/2 cup basil leaves
- 1/2 cup mint leaves
- 1 tablespoon pine nuts
- 2 whole garlic cloves, minced
- 1/2 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 pinch sea salt
- 1 pinch cracked black pepper
Preheat grill to a high heat.
In a food processor, combine basil, mint, pine nuts and garlic; pulse until smooth. With machine running, slowly pour in oil until smooth. Add Parmesan by hand; mix through with a spatula.
Season each American Lamb loin chop with salt and pepper on both sides. Place chops onto hot grill. Sear 3 to 4 minutes; turn, moving chops to an indirect heat. Cook until internal temperature reaches 135°F for medium rare.
Transfer cooked chops to a baking tray; let rest for 2 minutes.
Brush Mint Pesto generously onto the surface of each loin chop. Serve at once with a side salad.

Internal temperature of 145°F, with a 3 minute rest
