Ingredients
American Lamb Meatballs:
1 lb ground American Lamb
1/2 cup finely chopped
onion
2-3 cloves minced garlic
1/4 cup finely chopped
fresh parsley
1/2 cup panko bread
crumbs
1 egg
Greek Potatoes:
1lb Yukon Gold Potatoes
(around 7- sliced into wedges)
1/3 cup olive oil
11/2 cups chicken broth
4 crushed garlic cloves
1 lemon
1 1/2 tablespoons oregano
Salt and pepper to taste
Mezze Board:
Tzatziki
Hummus
Cucumber
Cherry tomatoes
Feta cheese
Olives
Pita bread
Fresh rosemary and dill
Directions
1.Heat oven to 425
2.Line a baking sheet with parchment paper
3.Cut up your onion and herbs and set to the side
4.In a mixing bowl combine all ingredients and mix well TIP: mixing everything together with your
hands is the best way to do it!
5.Roll into balls about the size of a golf ball
6.Put each American lamb meatball onto the baking sheet
Bake meatballs for 15-18 minutes until cooked all the way through and the meatballs are starting to get darker/crispy on top
1.Heat oven to 425
2.Cut potatoes into wedges
3.Line a baking dish with parchment paper
4.Add your potatoes into your dish
5.Add on the olive oil, chicken stock, lemon
6.Add on your herbs and spices
Bake in the oven for 45 minutes - 1 hour (until all the
liquid is nearly gone from the dish)
1.Cut your vegetables
2.Put your hummus, tzatziki, olives and any dips into
bowls/ramekins
3. Cut your pita bread into triangles
4.Arrange everything on a wooden board to make it look fancy
5.Add your homemade lamb meatballs and Greek potatoes to your board
6.ENJOY!
