Ingredients

● 3 tablespoons extra virgin olive oil 

● 2 pounds American lamb shoulder, cut into 2-inch cubes 

● 2 teaspoons kosher salt 

● 1 teaspoon fresh ground pepper 

● 1 large onion, diced 

● 3 garlic cloves, finely minced 

● 1 tablespoon minced fresh ginger 

● 1 tablespoon Five Spice Powder 

● 1 1/2 cups red wine 

● 1/2 cup stock or water 

● 1 cup pitted prunes, halved 

● Fresh parsley, for garnish

Directions

1. Season lamb: 

To prepare the American lamb. Season generously with salt and pepper. 

2. Brown lamb: 

In a dutch oven, over medium-high heat, brown the lamb until it develops a nice crust on all sides, at least 3 minutes per side. Then remove it from the skillet and set aside. 

1. Cook aromatics:

Combine the onion, garlic, ginger, Five Spice powder and a hefty pinch of salt in the skillet and cook until the onions become translucent, about 5 minutes. 

2. Cook stew: 

Next, add wine, stock or water, prunes and the browned lamb back to the pot. Once the liquid comes to a boil, reduce the heat to maintain a simmer, cover and continue cooking until the lamb becomes tender, about 1 1/2 - 2 hours. 

3. Finish dish: 

Garnish with fresh parsley.

USDA recommends the following time and temperature parameters

Ground Lamb

Internal temperature of 160°F

All Other Cuts

Internal temperature of 145°F, with a 3 minute rest
