Citrus & Balsamic Grilled American Lamb Skewers

  • 2 lbs American Lamb kabobs
  • 1 cup beef stock

  • Fresh parsley for garnish

  • ½ cup balsamic vinegar

  • Zest and juice from 1 orange

  • Zest and juice from 1 lemon

  • 2 tablespoon dijon mustard

  • 2 tablespoon olive oil

  • 1 tablespoon fresh rosemary

  • 1 tablespoon fresh thyme

  • 1 tablespoon bbq seasoning



  1. Place all the marinade ingredients in a large bowl and mix well.

  2. Take the American lamb kabobs and cut them into smaller, bite size pieces and place them in the marinade.

  3. For this you can use cubed leg, shoulder, or stew meat.
  4. Place the bowl in the refrigerator and allow it to marinade for at least an hour.

  5. Preheat the grill to high heat and set up for dual zone grilling - direct and indirect.

  6. Skewer the pieces and place the remaining marinade in a small saucepan and add the beef stock.

  7. Place the saucepan on the direct heat side of the grill, bring it to a boil and cook for 10 minutes, until the sauce starts to thicken.

  8. Place the American lamb skewers on the direct heat side of the grill and cook, rotating every 2 minutes. 

  9. USDA recommends the following time and temperature parameters: Internal temperature of 145 degrees F, with a 3 minute rest. 

  10. Remove from the grill, brush on the sauce, and allow to rest for 3 minutes. 

  11. Garnish with fresh parsley, serve and enjoy!

Ground Lamb

Internal temperature of 160°F

All Other Cuts

Internal temperature of 145°F, with a 3 minute rest
