Ingredients
For the Filling:
● 1 lb ground American lamb
● 1 small onion, finely chopped
● 3 cloves garlic, minced
● 1 cup cooked rice
● 1 tsp ground cumin
● ½ tsp ground coriander
● ½ tsp smoked paprika
● ¾ tsp kosher salt
● ¼ cup chopped parsley
● 2 tbsp lemon juice
For the Cabbage:
● 1-2 large green cabbages, cored (you’ll need 24 large leaves)
● Salt
For the Cooking Liquid:
● 1 cup broth (chicken or vegetable)
For the Tahini sauce:
● ¼ cup tahini
● 1 tbsp pure maple syrup
● 2 tbsp lemon juice
● 1 small garlic clove, grated
● 2–4 tbsp warm water
● Salt
For Finishing:
● Lemon wedges
● Pomegranate seeds
Directions
1. Prep the cabbage:
Bring a large pot of salted water to a boil. Add the whole, cored cabbage head(s); boil 6–7 minutes until the outer leaves are flexible. Drain and let cool slightly, then gently peel off 20-24 large leaves.
2. Make the filling:
Stir together Amerian lamb, onion, garlic, rice, cumin, coriander, smoked paprika, salt, parsley, and lemon juice.
3. Roll:
Trim the thick vein on each cabbage leaf if needed. Add ~⅓ cup filling near the base, fold sides in, and roll tightly.
4. Bake:
Arrange rolls seam-side down in a baking dish. Pour broth around (not over) the rolls. Cover tightly with lid or foil. Bake at 350°F for 55–65 minutes, until cabbage is tender and lamb is cooked through.
5.Tahini Sauce:
Whisk tahini, maple syrup, lemon juice, garlic, and water until smooth and pourable. Season.
6. Serve:
Drizzle rolls with tahini sauce and top with pomegranate seeds.
