Greek Flatbread Pizza with American Lamb Meatballs

Greek Flatbread Pizza with American Lamb Meatballs

Ingredients

American Lamb Meatballs (makes 32)

  • 1 pound ground American Lamb
  • 1/2 cup Panko bread crumbs
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1/2 small sweet onion, minced
  • 1 tablespoon olive oil

Homemade Tzatziki Sauce (makes 2 cups)

  • 1/2 cucumber, peeled, minced, moisture removed with a cheesecloth
  • 1-1/2 cups Greek yogurt
  • 1 tablespoon fresh chopped dill
  • 1 tablespoon fresh chopped mint
  • 1/2 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1/2 lemon, juiced
  • Salt and pepper, to taste 

Crispy Chickpeas (optional)

  • 1 can garbanzo beans, drained
  • Olive oil, cumin, salt and pepper 

Flatbread Assembly

  • 4 pieces of naan or pita bread
  • 2 cups Homemade Tzatziki Sauce
  • 32 America Lamb Meatballs
  • 1 cup of feta cheese
  • 1/3 cup pickled or fresh red onion
  • 1/3 cup sliced Kalamata olives
  • 1 cucumber, sliced into long strips
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Crispy Chickpeas, optional

Directions

For the American Lamb Meatballs: In a bowl, add lamb, Panko, parsley, mint, cilantro, cumin, paprika, chili powder, cinnamon, egg and onion; gently mix until well combined (avoid over-mixing). Roll meat mixture into 32 small balls, about 1-inch diameter. Drizzle oil in a large skillet. Add meatballs, turning once when they start to brown. Once meatballs are slightly brown on all sides, cover pan; cook 5 to 10 minutes longer until cooked through.

For the Homemade Tzatziki Sauce: Mince cucumber; add pieces to a cheesecloth, squeezing to remove excess moisture. In a bowl, mix cucumber, yogurt, dill, mint, lemon zest, garlic, lemon juice, salt and pepper; chill. 

For Crispy Chickpeas (optional): Spread beans on a baking sheet; roast at 375°F for 30 minutes. Lightly coat with oil, cumin, salt and pepper; roast another 15 minutes or to desired crispness. 

To assemble: Lightly toast naan or pita bread; cool. Spread each flatbread with 1/2 cup tzatziki; top with 8 meatballs, feta, onion, olives, cucumber, mint, cilantro and chickpeas if desired.

USDA recommends the following time and temperature parameters

Ground Lamb

Internal temperature of 160°F

All Other Cuts

Internal temperature of 145°F, with a 3 minute rest
