Ingredients
Burger
- 2 pounds ground American Lamb
- Kosher salt and black pepper, as needed
- 1/2 tablespoon butter
Harissa Goat Cheese
- 1 tablespoon harissa paste (more if you want it spicier)
- 5 ounces softened goat cheese
Spicy Fries
- 1 bag frozen French fries
- Kosher salt
- Black pepper
- Paprika
- Chili powder
- Bibb lettuce
- 4 brioche buns
Directions
For the French Fries: Cook fries according to packaging.
For the Burger: While fries are in the oven, form four patties from the ground lamb (1/2 pound each). Season each side liberally with salt and pepper. Heat a cast iron skillet on medium-high heat; add butter. Cook burgers on each side about 4 minutes for medium-rare.
While burgers are cooking, mix harissa paste into goat cheese; season with salt and pepper.
When fries are finished, place in a large mixing bowl; season with salt, pepper and about 3 parts paprika to 1 part chili powder, to taste. Mix the seasoning around so that it evenly covers all the fries.
Let burgers rest 1 to 2 minutes before serving. Place each burger on a bun, topped with Harissa Goat Cheese and Bibb lettuce.

Internal temperature of 145°F, with a 3 minute rest
