Lamb Loin Chops with Feta Cream Sauce

Ingredients

  • 1/3 cup plain sour cream
  • 1 cup feta cheese
  • 1/4 cup plus 2 tablespoons olive oil divided
  • 8 American Lamb loin chops (about 4 oz each)
  • 8 tablespoons butter
  • 3 cloves garlic, minced
  • 4 sprigs thyme
  • Salt and pepper to taste

Directions

Combine sour cream, 1/4 cup olive oil, and feta cheese in a blender.


Blend until smooth.

Prep American Lamb Chops by drying them with a paper towel, and then seasoning generously with salt and pepper on each side.

Heat 2 tablespoons olive oil in a cast iron skillet, over medium to medium-high heat.

Fry lamb chops in hot oil for 4 minutes until the bottom side is golden brown and seared.

Flip the chops over and place 1 tab of butter on each chop.  Add minced garlic and thyme to the hot oil.  Stir the garlic quickly so it doesn’t burn. Continue to cook chop for 4 minutes until seared and golden brown.

Top the chops with feta cream sauce.

USDA recommends the following time and temperature parameters

Ground Lamb

Internal temperature of 160°F

All Other Cuts

Internal temperature of 145°F, with a 3 minute rest

  1. As part of the Lamb Lovers Month - I decided to replicate the Lambs Loin Chops with Feta Cream. Overall the recipe was simple to follow. The Feta cream gave the dish a deliciously tart taste. I also added a side of Yellow Heart Shaped potatoes which were sautéed in butter, garlic ,rosemary and thyme. The Lamb was absolutely tasteful!
