Ingredients
- 2 pounds rack of American Lamb, fat trimmed and discarded
- 2 tablespoons olive oil
- 1 teaspoon garam masala
- 1 teaspoon dried mint
- 1 teaspoon fine sea salt
- Lemon wedges to serve
Directions
In a bowl, combine oil, garam masala, mint and salt; massage this mixture over the lamb. Let it rest, covered, 30 minutes.
In a large skillet over medium-high heat, heat oil. Once oil is hot, sear lamb until golden brown, about 3 to 4 minutes each side. Transfer lamb with a pair of tongs to a baking sheet or roasting pan; roast at 400°F 10 to 15 minutes, until lamb is cooked to desired degree of doneness. For a crispier crust, broil lamb 2 to 3 minutes, until the crust is golden brown.
Remove lamb from oven; cover loosely with a foil tent for about 5 minutes. Drizzle with the pan juices; serve immediately.
