Spicy Tomato Sauce American Lamb Meatballs

Pan of lamb meatballs with tomato sauce; fresh salads on the side

Ingredients

Lamb Mixture

  • 2 pounds ground American Lamb
  • 3/4 to 1 cup bread crumbs
  • 1/3 cup olive oil
  • 1/3 cup chopped mint
  • 1/3 cup chopped basil
  • 3 cloves garlic
  • 1 tablespoon chili flakes
  • 1 tablespoon cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 egg
  • Salt and pepper to taste 

Spicy Tomato Sauce

  • 3-4 cloves garlic, minced
  • 1 white onion, diced
  • 1⁄2 jalapeño, chopped
  • 1 28-ounce can whole peeled tomatoes
  • 2 teaspoons chili flakes
  • 2 teaspoons chili paste/harissa
  • 1 teaspoon paprika
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon Sriracha
  • 1/3 cup feta cheese
  • Salt and pepper, to taste
  • Parsley, for garnish
  • Pine nuts, for garnish 

Simple Summer Salad

  • 2 teaspoons olive oil
  • 1 teaspoon Dijon-style mustard
  • 1 lemon
  • 1 cup arugula
  • 1 to 2 oranges in segments
  • 1 fennel bulb, thinly sliced

Directions

For the Lamb: In a bowl add lamb, bread crumbs, oil, mint, basil, garlic, chili flakes, cumin, cinnamon, cayenne, egg, salt and pepper; mix well, set aside. 

For the Spicy Tomato Sauce: In a preheated pan, add a drizzle of olive oil. Add garlic, onion and jalapeño; let sweat. Once translucent, add tomatoes, chili flakes, chili paste, paprika, sesame oil, soy sauce and Sriracha; simmer 15 to 20 minutes. 

Form meatballs with lamb mixture. In a heated pan, cook for 10 to 12 minutes until golden brown and cooked through. Transfer Spicy Tomato Sauce to meatball pan; add feta, allowing cheese to melt. The bright red color of the sauce should turn an orangey tone with the feta. Season with salt and pepper. Let simmer for another 5 to 10 minutes or until ready to eat. 

For the Simple Summer Salad: In a bowl, mix together oil, mustard and lemon; add arugula, orange segments and fennel. Mix to combine. 

To serve, top meatballs with parsley and pine nuts. Serve with Summer Salad.

USDA recommends the following time and temperature parameters

Ground Lamb

Internal temperature of 160°F

All Other Cuts

Internal temperature of 145°F, with a 3 minute rest
