Ingredients
For the Skewered American Lamb
- 1 lb American lamb loin or leg, cut into 1-inch cubes
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
For the Pitas:
- 4 pita pocket breads, cut in half
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup mint leaves
- 1/2 cup tzatziki sauce
- 1/2 cup hummus
Directions
Prepare the Skewered American Lamb:
In a large bowl, combine the American lamb cubes, minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper.
Thread the American lamb cubes onto skewers.
Package to bring to your tailgate!
Preheat a grill or grill pan over medium-high heat.
Grill the American lamb skewers for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
Prepare the Tailgate
Arrange your red onion, cherry tomatoes, cucumber, crumbled feta cheese, tzatziki, hummus and fresh mint in portable containers.
Assemble and Serve
Place the skewered American lamb on a serving platter.
Arrange the pitas, mixed greens, red onion, cherry tomatoes, cucumber, and feta cheese on the side.
Serve the sauces in small bowls.
To eat, fill the pita breads with the sauces, grilled American lamb, red onion, cherry tomatoes, cucumber, and feta cheese. Each person can build theirs as they wish!

Internal temperature of 160°F
All Other Cuts
Internal temperature of 145°F, with a 3 minute rest
