Ingredients
Rack of American Lamb
- 1 rack American Lamb
- 1/4 cup olive oil
- 3 tablespoons sumac
- 2 tablespoons paprika
- 2 tablespoons pepper
- 2 tablespoons garlic powder
- 1 tablespoon za’atar
- 1 tablespoon salt
Herb Yogurt Sauce
- 1/2 cup cilantro
- 1/2 cup dill
- 1/2 cup Greek yogurt
- 1 tablespoon oil
- 2 garlic cloves
- 1 juice of lime
- Salt and pepper, to taste
Directions
For the Rack of American Lamb: In a bowl, add oil, sumac, paprika, pepper, garlic powder, za’atar and salt; mix well. Spread mixture all over the lamb; marinate 30 minutes to overnight.
For the Herb Yogurt Sauce: In a blender, add cilantro and dill; blend until chopped. Add yogurt, oil, cloves, lime juice, salt and pepper; blend together. Set aside.
Heat a skillet to medium-high heat with a drizzle of oil. Sear lamb 5 to 6 minutes on each side until charred. Place in the oven; cook at 400°F 15 to 20 minutes. Let rest 10 to 15 minutes; slice into chops.
Serve with Herb Yogurt Sauce.
