Ingredients
- 2-1/2 pounds boneless American Lamb shoulder, cut into pieces
- 1/2 cup zesty Italian dressing
- 2 tablespoons garlic powder
- 1 tablespoon olive oil
- 1 teaspoon cayenne pepper
- Salt and pepper, to taste
- 16 whole mushrooms
- 4 zucchinis, sliced
- 4 yellow squash, sliced
- 3 purple onions, coarsely chopped
- 2 red bell peppers, chopped
- 2 green bell peppers, chopped
- Wooden skewers, soaked in water
Directions
In a large bowl, whisk together Italian dressing, garlic powder, olive oil, cayenne, salt and pepper. Add lamb, mushrooms, zucchinis, squash, onions, red and green peppers; toss until all ingredients are combined. Cover; set aside for about 20 minutes.
Arrange ingredients on skewers; place on grill over medium-high heat. Grill about 15 minutes, or until desired doneness is achieved.

Internal temperature of 160°F
All Other Cuts
Internal temperature of 145°F, with a 3 minute rest
