Slow Smoked Leg of American Lamb

Ingredients

  • 1 bone-in leg of American lamb
  • ¼ cup Dad’s Steak Seasoning

Directions

1. Remove the leg of American lamb from the packaging and pat it dry on all sides.

2. Trim away any excess fat and season liberally with Dad’s Steak Seasoning

3. Preheat your grill to 300 degrees and set for dual zone cooking (hot side and a cool side)

4. Place the leg of lamb on the indirect heat side of the grill and cook until the internal temperature reaches 130 degrees

5. Move the leg of lamb to the direct heat side of the grill and sear over high heat on all sides until the internal temperature reaches 140 degrees.

6. Remove the grill, let it rest uncovered for 15 minutes, slice and serve. 

USDA recommends the following time and temperature parameters

Ground Lamb

Internal temperature of 160°F

All Other Cuts

Internal temperature of 145°F, with a 3 minute rest
