lamb loin chops with cucumber mint salad and sweet and smoky tahini

Ingredients

  • 3 lbs ground American lamb
  • 1 large onion, grated
  • 6 garlic cloves, minced
  • 1 cup chopped fresh parsley
  • 2 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp paprika
  • 1 tbsp sumac
  • 2 tbsp pomegranate seeds
  • 2 tsp ground cinnamon
  • 1 tbsp salt
  • 1 tsp black pepper

Directions

1. Mix all ingredients in a large bowl until fully combined.

2. Shape into long sausage-like koftas on soaked wooden or metal skewers.

3. Grill over medium-high heat for 4–5 minutes per side, or bake at 425°F for 20 minutes, turning once.

4. Garnish with pomegranate seeds and any remaining parsley

 

USDA recommends the following time and temperature parameters

Ground Lamb

Internal temperature of 160°F

All Other Cuts

Internal temperature of 145°F, with a 3 minute rest

  1. Omg!! I love lamb I've been cooking it since I was 16! But this site just gave me so many more ideas about how to prepare and cook it in different styles!! Now the one whit the spinach i have to try looks very appetizing!!!
